La Escribana is an unfortified white made from Palomino Fino grapes from Cerro de Obispo. This south-east facing hill in pago Macharnudo has been cultivated since the 15th century. They pick the grapes in two stages, the first pick of slightly greener grapes adds a bright freshness and citrus peel aromas to the finished wine. Complex and savoury in the mouth, with dried fruit, and a long refreshing finish. Ageing in old sherry butts under a light layer of flor adds a salty savouriness
