Sometimes, it’s best not to mess with tradition, and this wine is a hallmark example of such an ethos. Crushing of the Trebbiano grapes is done by foot, just as Emidio has always believed necessary. The 2018 Trebbiano, coming from a particularly hot and dry vintage, is rich and complex with confit lemons, white spices, generous salinity and plenty of white flowers accompanied by an almost balsamic character. Dry and elegant with dominant citrus notes, the palate has hints of dried mushrooms and a stony minerality on the finish. The natural acidity of the grape combined with the painstaking care of the Pepe family always guarantee a white with tremendous cellaring potential.
